The first Final Fantasy to gain true mainstream popularity, Final Fantasy VII remains my absolute favorite of the series.  If somehow you haven't played this yet, I think now's the time. 
FFVII tells the story of Cloud Strife, a young man who has lent his services to a terrorist group called AVALANCHE.  Their mission is to stop the evil Shrinra corparation from destroying the planet by sucking out it's energy using Mako Reactors.  OF course this is just the tip of the iceberg.  FFVII's story, to me, is the absolute best in the series, and I'm doubtful it will ever be topped.  Besides a few annoying additions, the characters in FFVII are top notch in terms of personality and back story.  Cloud's love triangle with innocent flower girl Aeris and busty bartender Tifa, is gauranteed to make even the cold hearted feel all tingilly inside. 
And of course, the main villian Sephiroth remains the coolest evil dude the FF series has ever seen. 
The battles in FFVII play a lot like FFVI (or III in the US), using the Active Time Gauge to make things more interesting.  The most notable addition is the Materia system which allows you to customize your weapons and armor to a heavy degree.  Minigames are present in a big way in this FF.  From the Golden Saucer, an amusment park filled with arcadey games, to snowboarding and submarine battles, FFVII has a lot of fun extras that will extend your play time by hours. 
Graphically, FFVII has been overshadowed by it's sequels.  Nevertheless, the rendered backgrounds in VII are very well done.  The 3D models are, well..., blocky at best, but for me this adds a certain charm to the game that just can't be replaced with fancy graphics.  The CG movies are also great.  And the music? Well I'm sure I'm not alone in thinking that this is the best FF soundtrack of all time.  From the tear jerking Aerith's Theme to the awe inspiring Main Theme, the music in this game is so memorable, you won't forget these tunes for a long time. 
FFVII is the man.  There is not much more to say about such a wonderful game.  My favorite.  My rating: 98%
