Morrowind is one of the most open-ended, detailed RPGs I've ever seen.

Bethesda have done an amazing job here - their ambition since Elder Scrolls I has been to create a totally free environment, and this time (IMO) they're really achieved it.

I found Morrowind to be an incredibly immersive RPG; the graphics are quite brilliant for an RPG, and good by even FPS standards.

This game is about as open ended as it gets! 
You can join theif guildes or fighter guildes or whatever you want and work your way up the ranks, like in Baldurs Gate 2 but much more to it.

Morrowind delivers on what it says on the box "Explore another world".  It"s amazingly rich and detailed.  You can follow any number of quest lines or just go out and do whatever you feel like (and deal with the consequences).
